Cocktails with Mestizo Mezcal Añejo

Humo y Durazno
1 ½ oz Mestizo Mezcal Añejo
1 oz Cointreau
2 oz orange juice
½ fresh lemon squeezed
1 tsp of Dole peach syrup
½ tsp brown sugar
1 egg white – this will create a frothy foam when shaking the cocktail
Dole canned peaches – 3 slices
1 sprig fresh thyme
Method: muddle sliced peaches and thyme in a mixing tin, and then add all other ingredients, Mestizo Añejo last.  Shake with ice, strain into red wine glass with fresh ice.  Dust with fresh ground nutmeg.  Garnish with fresh orange wheel and thyme sprig.
 Mestizo y Champagne
1 ½ oz Mestizo Mezcal Añejo
½ oz Cognac
½ oz Grand Marnier
2 sliced strawberries
squeeze fresh lime
top with champagne
Method: add all ingredients into a mixing tin; pour into a red wine glass with ice.  Garnish with a large strawberry perched on the side, serve with a straw.
Mestizo Manhattan
2 oz Mestizo Mezcal Añejo
½ oz vanilla bean Demerara
2 dashes of Fee Brothers Aztec chocolate bitters
1 oz Carpano Antica
Method: stir all ingredients over ice and strain into glass that has an amaretto rinse.  Garnish with cherry.
Paloma Ahumada
2 oz Mestizo Mezcal Añejo
¾  oz fresh squeezed grapefruit juice
½  oz fresh squeezed lime juice
1 tsp of superfine sugar
1 ½ oz Topo Chico
Method: add Mestizo Añejo, grapefruit juice, lime juice, and sugar to a shaker and shake without ice.  Pour into a Collins glass.  Top with Topo Chico and add ice.  Garnish with a grapefruit peel.
